Effects of Solvents on Total Phenolic Content and Antioxidant Activity of Ginger Extracts

Ginger (Zingiber officinale) is a popular spice which used for the treatment of different gastrointestinal and inflammatory discomfort. In present study, total phenolic content (TPC) antioxidant activity ginger extract using four solvents (ethanol, methanol, acetone, ethyl acetate) were determined. Among solvents, methanol showed maximum (1183.813 mg GAE/100 g at Ayikel 1022.409 Mandura) least was found in acetone (748.865 690.152 Mandura). addition, highest DPPH radical scavenging (84.868% 82.883% observed methanol. However, (73.864% 70.597% Antioxidant activities extracts also expressed as IC50 values, has value (0.654 0.812 mg/mL) followed by acetate ethanol, while being lowest (0.481 0.525 mg/mL). The result this study that extraction significantly affected ginger. Thus, can be regarded promising candidates natural sources antioxidants with high contents.
